Vietnamese noodle is one of the most popular dishes in the world. Cooking this food is not so difficult if you know the key steps. First, you have to prepare the ingredients include linguine-shaped rice noodles, a few herbs, salads, meat, primarily either beef or chicken. Then you stew meat for about 2 hours. Next you season some spices into the meat. After that you put the noodles in the bowl. Finally you serve with salads and enjoy it.

Vietnam is famous with its traditional and delicious dishes. All of them easioly bring to anyone's mouth indeed, but as myself, I enjoy spring rolls best. Spring rolls are lightly fried rice - paper rolls, smaller and crispier than Chinese egg rolls but more flavorful. They are filled with highly seasond morsels of crab, shrimp, chopped vegetables, onion, mushroom, vermicelli and eggs. To prepare them, place the above mentioned filling on a thin rice pancake, roll up then fry. Finally, spring rolls, when fully prepared, are wrapped into somes kinds of fresh vegetables, then doused in fish sauce. My mother ussually cooks spring rolls for me, espeicially on important days in year, such as Tet holiday. When I eat them, i feel all of my mother's love that she reserves for me. To me, they're the most speicial dish in this world.

How to make Vietnamese Spring Rolls
In general, there are four steps to make Vietnam spring rolls: mixing ingredients, rolling up, deep frying and displaying the rolls.
About preparing the filling, grind or chop the meat finely. Cut vegetables into small pieces that fit the rolls. Soak glass noodles, wood ear, and mushrooms deep in water before rinsing and shredding. Chop onions, scallions, and garlic. All mixed with eggs and spices (add very little salt because the rice paper is available with salty flavour).Before rolling this mixture, make the rice papers moist a little, cut the solid edges. Put a sufficient amount of the mixed filling near the bottom of rice paper, spread it out in a line. And leave enough room on each side of the wrap. Fold the bottom up over the filling, then fold the two sides over and roll up until the end of the sheet.
The spring rolls need to be fried deeply in boiling oil until the rice papers turn golden brown. The dish is at its best with the alluring smell, eye-catching brown colour, not burnt or cracky. Display all the cooked rolls on the dish with fresh lettuce and herbs.
About Dipping Sauce: In Vietnam, a bowl of fish sauce is different for each dish with specific requirements. With fried spring rolls, a quality dipping sauce bowl should be the harmonious combination of flavours such as fish sauce, lemon juice, sugar, pepper, minced garlic and chilli, and pieces of carrot, papaya or kohlrabi.

Once being a basic food of farmers and poor families in Vietnam, com tam or broken rice is now a favourite dish of most Vietnamese. It is said that the best broken rice can be found in Saigon. When you come to Saigon, you should try this dish at least one time and you will not regret it.
Com tam literally means broken rice. Broken rice originally consisted of grains which were broken during the harvesting and cleaning of rice. In the past, as most people preferred to eat the long, whole grain rice, broken rice grains were difficult to sell and usually eaten by the Vietnamese working class because of the cheap price. Nowadays, often favored over long grain rice for its unique flavour and texture, broken rice is one of the best-loved fares in Vietnam.

Egg coffee, called Cà Phê Trứng in Vietnamese, was first invented by Nguyen Giang in 1946. There was a shortage of milk in Hanoi due to the French War. Mr. Nguyen reatively began adding whisked eggs to his coffee instead.
The original version was a bit, well, eggy. But over time the recipe was modified with the addition of sugar, condensed milk, and even Laughing Cow cheese. No one knows the recipe for sure since it’s a secret recipe. These days Egg Coffee is a staple of Hanoi coffee culture and a must-try while in Hanoi!

Vietnamese food culture varies by regions from the north to the south. In Northern Vietnam, food is characterized by light and balanced.
